Cashew-Quinoa Burgers

Ingredients:
2 cups dry quinoa
1/4 cup chia seeds
1 cube vegetable bouillon
3 tsp. smoked paprika
1 cup raw cashews
3 spring onions
3 cloves garlic
1 tsp. dry coriander
1/2 tsp. chili powder
2 tsp. soy sauce
1/3 panko crumbs
2 eggs
Olive oil
Salt

1. Boil the quinoa. In the cooking water, add the chia seeds, veggie bouillon, and 2 tsp. smoked paprika.
2. Finely chop the cashews, garlic, and spring onions. Set aside onion greens. 3. In olive oil, sauté the cashews, garlic, and spring onion whites, with 1 tsp. smoked paprika, coriander, and chili powder.
3. Mix the cashew mixture with the cooked quinoa. Add soy sauce, panko, onion greens, and salt to taste.
4. Mix in 2 eggs. Form into patties and refrigerate at least 2 hours.
5. When ready to eat, cook the patties in a frying pan with olive oil until holding together.
