Mixed Veggie Balls

Ingredients:
400 g. Naturli Minced (vegan ground beef substitute)
1 cup dry oatmeal
2-3 shallots, finely chopped
2-3 purple or orange carrots, shredded
2 cups spinach leaves
2 eggs
1/3 cup oat milk
1/2 tsp. nutmeg
Pinch of salt


1. Boil or sauté the spinach, until fully shrunken.
2. Sauté the shallots in olive oil.
3. In a large bowl, mix the vegan mince, oatmeal, cooked spinach and onions, shredded carrots, eggs, oat milk, nutmeg, and salt.
4. Roll the mixture into 1-2 inch balls, by hand, and place on a lightly oiled baking sheet.
5. Bake at 175C/350F for 50 minutes. 6. Serve with favorite sauce.
